Ingredients:
1 cup all-purpose flour
1 tablespoon baking powder
2 tablespoons granulated sugar
1/4 teaspoon salt
1 egg
1 cup milk
2 tablespoons honey
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
1 cup fresh blueberries
Additional butter or oil for cooking

Instructions:
In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt until well combined.
In a separate bowl, beat the egg, then stir in the milk, honey, melted butter, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to over mix; a few lumps are okay.
Gently fold in the fresh blueberries until evenly distributed throughout the batter.
Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
Pour about 1/4 cup of batter onto the skillet for each pancake, spreading it slightly with the back of a spoon if needed.
Cook the pancakes for 2-3 minutes, or until bubbles form on the surface and the edges start to look set.
Carefully flip the pancakes and cook for an additional 1-2 minutes on the other side, or until golden brown and cooked through.
Transfer the cooked pancakes to a plate and keep warm while you cook the remaining batter.
Serve the honey kissed pancakes warm, topped with additional fresh blueberries and a drizzle of honey. Optionally, dust with powdered sugar for extra sweetness.
