Store at 36–38°F (2–3°C) at the back of the fridge, not the door. Keep tightly wrapped or sealed when not in use to prevent drying.

This natural development is characteristic of aged cheeses. For best quality, keep the cheese tightly wrapped and refrigerated, and discard it if it develops an unusual odor, excessive moisture, or signs of spoilage.
